Instructions

  1. Cook the rice: Rinse the rice under cold water until water runs clear. Combine rice with 2 cups of water in a saucepan, bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes (white rice) or 40-45 minutes (brown rice) until water is absorbed and rice is tender. Remove from heat and let it sit covered for 5 minutes.
  2. Prepare the black beans and corn: If using canned beans and corn, drain and rinse them thoroughly. If using frozen corn, thaw it before assembling. Warm the beans and corn slightly if desired.
  3. Assemble the bowl: Place a serving of cooked rice at the base of your bowl. Top with black beans and corn evenly. Add sliced avocado on top, and finish with a generous spoonful of salsa.
