Instructions

  1. Preheat the oven: Heat your oven to 350°F (175°C) to ensure it’s ready for baking the casserole.
  2. Prepare the chicken: Cut the boneless skinless chicken breast or thighs into small bite-sized pieces, about ½ to 1 inch in size for even cooking and easy eating.
  3. Combine ingredients: In a large 9×13 inch casserole dish, mix together the chicken pieces, broccoli florets, shredded carrots, teriyaki sauce, hoisin sauce, and quick cooking rice. Stir thoroughly to evenly distribute all components.
  4. Add liquid and bake: Pour the chicken broth evenly over the chicken and vegetable mixture. Place the casserole dish in the oven and bake for 45 to 55 minutes, or until the rice is fully cooked and most of the liquid has absorbed. The edges will bubble but the casserole should not be soupy.
