Ingredients

Scale

Main Ingredients

  • 1 (32 ounce) bag frozen tater tots
  • 1 tablespoon olive oil
  • 1/2 pound breakfast sausage, removed from casing
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper (any color)
  • 6 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese

Optional Toppings

  • Chopped green onions
  • Sour cream
  • Salsa
  • Hot sauce

Instructions

  1. Prepare Tater Tots: Preheat the oven to 400°F (200°C). Spread the frozen tater tots in a single layer on a baking sheet, drizzle with olive oil, then bake for 20-25 minutes. Turn and flip them halfway through baking to ensure they become golden brown and crispy all over.
  2. Cook Sausage and Vegetables: While the tater tots bake, heat a large skillet over medium heat. Add the breakfast sausage, breaking it up with a spoon as it cooks. Once browned, drain any excess grease. Add the chopped onion and bell pepper to the skillet and cook for about 5-7 minutes until softened. Season with salt and pepper to taste.
  3. Whisk Eggs and Milk: In a large bowl, whisk together the eggs and milk until fully combined. Season this mixture with salt and pepper to your preference.
  4. Assemble the Breakfast Bowl: Lightly grease a 9×13 inch baking dish. Spread the cooked tater tots evenly on the bottom of the dish. Evenly distribute the cooked sausage and vegetable mixture over the tots. Pour the egg and milk mixture over the top. Finally, sprinkle the shredded cheddar cheese and Monterey Jack cheese evenly across the surface.
  5. Bake the Bowl: Place the assembled dish in the preheated oven and bake for 25-30 minutes. Bake until the eggs are fully set and the cheese is melted and bubbly.
  6. Serve: Remove the dish from the oven and allow it to cool for a few minutes. Cut into squares for serving. Add optional toppings such as chopped green onions, sour cream, salsa, or hot sauce according to taste.

Notes

  • For extra crispy tater tots, spread them out without overlapping on the baking sheet.
  • You can substitute breakfast sausage with turkey sausage for a leaner option.
  • Add your favorite vegetables like mushrooms or spinach for added nutrition.
  • This dish can be prepared ahead of time and refrigerated; just reheat before serving.
  • Adjust the cheese types and amounts depending on your preference or dietary needs.
