Ingredients

Scale

Dough

  • 1 cup warm milk
  • 2 ¼ tsp active dry yeast
  • 2 tbsp granulated sugar
  • 2 large eggs
  • 4 tbsp unsalted butter, softened
  • 3 ½ cups all-purpose flour
  • 1 tsp salt

Filling

  • 2 tbsp unsalted butter
  • 3 cloves garlic, finely minced
  • 2 tbsp chopped fresh herbs (thyme, parsley, or rosemary)
  • 2 cups shredded mozzarella cheese

Egg Wash

  • 1 large egg
  • 1 tbsp water

Instructions

  1. Activate yeast: Mix warm milk, sugar, and yeast in a bowl and let sit for 10 minutes until foamy, indicating the yeast is active.
  2. Make dough: Add eggs, softened butter, flour, and salt to the yeast mixture. Knead until the dough is smooth and elastic. Cover and let it rise in a warm place for 1 hour until doubled in size.
  3. Prepare garlic herb butter: While the dough rises, melt butter in a pan over medium heat. Add minced garlic and cook for 2 minutes until fragrant. Stir in chopped fresh herbs and set aside to cool slightly.
  4. Shape dough: Roll the risen dough into a large rectangle on a floured surface. Brush the surface evenly with the garlic herb butter and sprinkle shredded mozzarella cheese over it.
  5. Form swirled loaf: Roll the dough tightly into a log. Using a sharp knife, slice the log lengthwise down the middle to expose the layers. Twist the two halves together with the cut sides facing up to reveal the swirl.
  6. Second rise: Place the twisted dough into a greased loaf pan. Cover and let rise for an additional 30 to 40 minutes until puffy.
  7. Bake: Preheat your oven to 350°F (175°C). Beat the egg with water to make an egg wash and brush it over the top of the loaf. Bake for 35 to 40 minutes until golden brown and cooked through.
  8. Cool and serve: Let the bread cool for 15 minutes before slicing to allow the layers to set. Serve warm for best flavor and texture.

Notes

  • For even more flavor, add a sprinkle of Parmesan cheese before baking.
  • Always let the bread cool slightly before slicing to achieve clean, defined layers.
  • If using dried herbs instead of fresh, reduce the quantity to 2 teaspoons total to avoid overpowering the bread.
