Instructions

  2. Soak Breadcrumbs: In a small bowl, combine the panko breadcrumbs and milk. Let this mixture sit for 5 minutes so the panko absorbs the milk and softens.
  3. Mix Meatloaf Ingredients: In a large mixing bowl, add ground beef, ground pork, the soaked panko mixture, eggs, finely chopped onion, minced garlic, 2 tablespoons gochujang, soy sauce, sesame oil, brown sugar, ground ginger, salt, and black pepper. Mix gently but thoroughly until all ingredients are fully combined, taking care not to overmix to avoid a dense texture.
  4. Shape Meatloaf: Transfer the meat mixture into the prepared loaf pan and spread it evenly, shaping it into a neat loaf.
  5. Prepare Glaze: In a separate small bowl, whisk together ketchup, rice vinegar, honey, and 1 teaspoon gochujang until smooth. Spread this glaze evenly over the top of the meatloaf.
