Roasted Garlic

  • 1 head of garlic
  • 1 tablespoon olive oil, divided

Dip Mixture

  • 8 ounces goat cheese, softened
  • 1 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (remaining)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to get ready for roasting the garlic head evenly.
  2. Prepare the Garlic: Slice the top off the head of garlic to expose the cloves inside. Place the garlic on a sheet of aluminum foil and drizzle with 1 tablespoon of olive oil. Wrap the foil tightly around the garlic.
  3. Roast the Garlic: Place the wrapped garlic in the oven and roast for 30-35 minutes until the cloves are soft, golden, and easily squeeze out of their skins. Remove from oven and let cool slightly.
  4. Combine Ingredients: In a mixing bowl, add the softened goat cheese, cream cheese, sour cream, and the remaining tablespoon of olive oil. Mix gently to combine the base of the dip.
  5. Add Roasted Garlic: Squeeze the roasted garlic cloves out of their skins directly into the cheese mixture. The roasted garlic adds a sweet and mellow depth of flavor.
  6. Seasoning: Stir in fresh thyme leaves along with salt and pepper. Adjust seasoning according to your taste preferences.
  7. Blend Mixture: Use a hand mixer or food processor to blend everything thoroughly until the dip is smooth and creamy in texture.
  8. Transfer to a Serving Dish: Spoon the dip into a serving bowl and smooth the surface with a spatula for a lovely presentation.
