  • ¼ cup Kewpie Mayo
  • 3 tbsp Sriracha (adjust to taste for spiciness)
  • 2 green onions, chopped

Vegetables & Garnish

  • Cucumber, julienned
  • Avocado, thinly sliced
  • Carrot, julienned
  • Clover sprouts
  • Black sesame seeds, for garnish
  • Nori sheets, cut into halves

Instructions

  1. Prepare Sushi Rice: Cook the sushi rice according to the package instructions. Once cooked, transfer it to a bowl. Add rice vinegar, sugar, and a pinch of salt to the rice and gently mix until all ingredients are well combined and the rice is seasoned. Allow it to cool to room temperature.
  2. Make Spicy Shrimp Mixture: In a mixing bowl, combine the chopped cooked shrimp with Kewpie mayo, sriracha sauce, and chopped green onions. Stir well until the shrimp is evenly coated in the spicy creamy sauce.
  3. Assemble Hand Rolls: Place half a nori sheet flat on a clean surface. Spread about 1-2 tablespoons of the seasoned sushi rice on the nori, leaving some space at the edges. Layer cucumber, avocado slices, julienned carrots, and clover sprouts on top of the rice.
  4. Add Spicy Shrimp: Spoon a portion of the spicy shrimp mixture over the arranged vegetables.
