Main Ingredients
- 500g beef mince (about 5% fat)
- 1 shallot or ½ small red onion, finely diced
- ½ tsp mixed dried herbs
- 8 mini tortillas
- Vegetable or sunflower oil, for frying
- 8 slices burger cheese (cheddar or Monterey Jack)

- Prepare the Meat Mixture: In a bowl, combine the beef mince, finely diced shallot or red onion, and mixed dried herbs. Mix thoroughly by scrunching all the ingredients together with your hands until evenly combined.
- Form Patties on Tortillas: Divide the meat mixture into eight equal balls. Press each ball directly onto a mini tortilla to form thin burger patties that cover most of the tortilla surface, leaving about a 3cm border around the edges.
- Heat the Pan and Cook Patties: Heat a small drizzle of vegetable or sunflower oil in one or two large frying pans over medium heat. Place the tortillas meat-side down into the pan(s). Cook for 6-8 minutes, pressing the tortillas gently with a spatula to ensure good contact and browning. Lift a tortilla occasionally to check if the meat is cooked through.
- Flip and Add Cheese: Once the meat is cooked, carefully flip each tortilla over. Immediately top each patty with a slice of burger cheese. Cook for an additional 1-2 minutes until the cheese melts.
