Instructions

  1. Prepare egg white mixture: In a medium-sized bowl, whisk together the egg whites and vanilla extract until frothy and slightly thickened, about 1 to 2 minutes.
  2. Add spices and sugar: Stir the brown sugar, ground cinnamon, salt, cayenne pepper (if using), ground allspice, and maple syrup into the egg white mixture until fully combined.
  3. Coat the nuts: Add the mixed nuts to the bowl and stir well to ensure all nuts are evenly coated with the spiced syrup mixture.
  4. Prepare the slow cooker: Spray the inside of a 4 to 6-quart slow cooker with nonstick cooking spray. Toss in the butter so that it melts evenly as the nuts cook.
  5. Slow cook the nuts: Transfer the coated nuts into the slow cooker. Place a paper towel over the crockpot opening, then cover with the lid. Cook on LOW for 3 hours, stirring every 30 minutes to redistribute the nuts and encourage caramelization. Alternatively, cook on HIGH for 1 hour, stirring frequently.
  6. Cool and set: Once cooked and caramelized, transfer the nuts onto a parchment-lined baking sheet. Let them cool completely to harden and dry before breaking into clusters or storing.

Notes

  • Storage: Store the cooled nuts in an airtight container at room temperature for up to 3 weeks or freeze for up to 2 months to maintain freshness.
