Ingredients

Scale

Meat

  • 1 pound ground sirloin

Vegetables

  • 3 cloves garlic, minced
  • 23 large scallions, roughly chopped
  • 1 cup matchstick carrots
  • 1 medium red bell pepper, sliced

Liquids and Sauces

  • ½ cup low sodium soy sauce
  • 14.25 ounces chicken stock or beef stock

Other Ingredients

  • 2 packs ramen noodles (seasoning packets discarded)
  • 2 tablespoons brown sugar
  • Sesame seeds (optional, for garnish)
  • Additional scallions (optional, for garnish)

Instructions

  1. Brown the beef: Heat a large skillet over medium heat. Add the ground sirloin and cook until no pink remains, breaking it apart as it cooks. Drain any excess fat before transferring the beef to the slow cooker.
  2. Add vegetables to slow cooker: Place the matchstick carrots, sliced red bell pepper, and roughly chopped scallions into the slow cooker along with the cooked ground beef.
  3. Prepare the sauce: In a separate bowl, whisk together the minced garlic, low sodium soy sauce, brown sugar, and chicken or beef stock to create a flavorful sauce.
  4. Combine and start slow cooking: Pour the sauce mixture over the ingredients in the slow cooker. Stir well to combine all components evenly.
  5. Slow cook: Cover the slow cooker and cook on low for 4 to 6 hours to allow flavors to meld and vegetables to soften.
  6. Add ramen noodles: About 30 minutes before serving, add the dry ramen noodles to the slow cooker (discard the seasoning packets). Stir occasionally to ensure the noodles cook evenly and become tender.
  7. Serve and garnish: Once the noodles are tender, ladle the ramen into bowls and garnish with additional scallions and sesame seeds if desired. Serve hot and enjoy your comforting slow cooker beef ramen.

Notes

  • Discard the seasoning packets from the ramen noodles to avoid excess sodium and unwanted flavors.
  • Use low sodium soy sauce to control salt levels.
  • Adding the noodles towards the end prevents them from becoming mushy.
  • You can substitute ground sirloin with other ground beef cuts or ground turkey as preferred.
  • Optional garnishes like sesame seeds and extra scallions add texture and bright flavor.
