  • 1 green pepper, diced

Sauce & Cheese

  • 2 cans (15 oz each) sloppy joe sauce
  • 2 cups cheddar cheese, divided

Pasta

  • 1 package (16 oz) rotini pasta, cooked

Instructions

  1. Cook the Meat and Vegetables: In a large pan, add the ground beef, diced green pepper, and diced onion. Cook over medium heat until the ground beef is no longer pink and the vegetables are tender. Drain any excess fat if necessary.
  2. Add Sloppy Joe Sauce: Pour the two cans of sloppy joe sauce into the cooked beef and vegetables mixture. Stir well to blend and heat for a few seconds until it begins to simmer gently.
  3. Mix in the Cooked Pasta: Add the cooked rotini pasta to the meat and sauce mixture. Stir thoroughly to coat all the pasta evenly with the sauce.
  4. Add and Melt Cheese: Sprinkle 1 to 1 ½ cups of cheddar cheese into the mixture and stir until melted and blended. Then add the remaining cheese on top and heat on low until fully melted.
  5. Serve: Spoon the casserole onto plates or into bowls. Optionally garnish with fresh parsley for a pop of color and freshness.
