Instructions

  1. Prepare Ingredients: Wash and roughly chop the fresh spinach. Drain and rinse the chickpeas if canned. Finely chop the onion and mince the garlic.
  2. Toast Pine Nuts: In a dry skillet over medium heat, toast the pine nuts until golden and fragrant, about 2-3 minutes, stirring frequently. Remove and set aside.
  3. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook another minute until fragrant.
  4. Add Chickpeas and Raisins: Stir in the chickpeas and raisins, cooking for 2-3 minutes so the raisins soften and flavors combine.
  5. Add Spinach: Gradually add the spinach, stirring continuously until it wilts and reduces in volume, about 3-5 minutes. Season with salt and black pepper to taste.
  6. Combine and Serve: Stir in the toasted pine nuts, mix well, and remove from heat. Serve warm as a side dish or light main course.
