Instructions

  3. Add garlic and thyme: Stir in the minced garlic and dried thyme, sautéing for 1-2 minutes until fragrant but not burned.
  4. Blend the sauce: Transfer the caramelized onion mixture to a blender, add the pumpkin puree and vegetable broth. Blend starting at low speed, increasing to high, for 30-60 seconds until smooth and creamy.
  5. Season the sauce: Taste the sauce and add salt and pepper as needed. Usually, a pinch of black pepper and a pinch of salt are sufficient, especially if using unsalted broth.
  6. Serve: Pour the sauce over your cooked noodles or vegetable noodles of choice. This recipe makes enough sauce for about 16 ounces of pasta.
