This simple and effective turkey brine recipe enhances the flavor and moisture of your turkey by soaking it overnight in a salted, sweetened, and herb-infused water solution. Perfect for ensuring a juicy and flavorful turkey for any occasion.

Ingredients

Scale

Brine Solution

  • 1 gallon water
  • 1 cup kosher salt
  • 1/2 cup sugar (granulated or brown sugar)
  • 23 sprigs fresh herbs (such as rosemary, thyme, or sage)
  • 1 tablespoon whole black peppercorns (optional)

Instructions

  1. Prepare the Solution: In a large container or pot, dissolve 1 cup kosher salt and 1/2 cup sugar into 1 gallon of water by stirring thoroughly until no granules remain.
  2. Add Herbs and Spices: Add the fresh herbs and any optional spices like black peppercorns to the brine solution to infuse additional flavor.
  3. Brine the Turkey: Submerge the whole turkey completely in the brine solution, ensuring it is fully covered. Cover the container and refrigerate or keep in a cool place for 12 to 24 hours to allow the flavors to penetrate the meat thoroughly.

Notes

  • Use a non-reactive container like stainless steel, glass, or food-grade plastic to avoid unwanted chemical reactions.
  • Do not brine for more than 24 hours, as it can make the turkey too salty or mushy.
  • After brining, rinse the turkey thoroughly with cold water and pat dry before cooking to remove excess salt.
  • Discard the brine solution after use; do not reuse it.
  • This brine works well for turkeys up to 16 pounds; adjust brine quantity proportionally for larger birds.
