Delightfully moist and flavorful pear bars featuring a buttery graham cracker crust and a spiced pear filling made with brown sugar and warm spices. Perfect as a comforting dessert for fall or any occasion, these bars combine the natural sweetness of ripe pears with the rich caramel notes of brown sugar and the crunchy texture of graham cracker crumbs.

Ingredients

Scale

For the Crust:

  • 3 cups graham cracker crumbs
  • 3/4 cup softened unsalted butter
  • 1/4 cup sugar

For the Filling:

  • 2.5 cups dark brown sugar
  • 3 eggs
  • 2/3 cup graham cracker crumbs
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup peeled and diced pears (about 2 ripe pears)

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) to prepare for baking the crust and filling.
  2. Make Crust Mixture: In a medium bowl, mix graham cracker crumbs, softened butter, and sugar until crumbly using a fork or pastry cutter.
  3. Press and Bake Crust: Press the crumbly crust mixture evenly into the bottom of a 9×13-inch baking dish. Bake for 10–12 minutes until lightly golden.
  4. Prepare Filling Mixture: In the same bowl, combine dark brown sugar, graham cracker crumbs, and flour. Stir in cinnamon, ginger, salt, and baking powder until well incorporated.
  5. Add Wet Ingredients: Beat in the eggs and vanilla extract until a thick batter forms, ensuring even mixing.
  6. Fold in Pears: Gently fold in the peeled and diced pears, taking care to distribute evenly without breaking pieces apart.
  7. Assemble and Bake: Spread the pear filling evenly over the pre-baked crust. Return the baking dish to the oven and bake for an additional 25–30 minutes until the filling is set in the center.
  8. Cool and Slice: Allow the bars to cool completely in the baking dish before slicing into 12 bars for serving.

Notes

  • For best results, use ripe Bartlett, Anjou, or Bosc pears for natural sweetness and soft texture.
  • To make this recipe gluten-free, substitute graham cracker crumbs with certified gluten-free graham crackers or cookie crumbs.
  • Dairy-free options: replace butter with coconut oil or vegan butter.
  • Add nuts like chopped pecans or walnuts for extra crunch.
  • Enhance the flavor by adding a splash of bourbon or rum to the filling.
  • Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week.
  • Freeze individual bars wrapped tightly for up to 1 month; thaw before serving.
  • Serve warm with vanilla ice cream or whipped cream and a drizzle of caramel sauce for a decadent treat.
