Ingredients

Scale

For the Salmon

  • 2 teaspoons olive oil
  • 4 (6 oz) skinless salmon fillets (1-inch thick)
  • Salt and freshly ground black pepper, to taste
  • 2 cloves garlic, minced
  • 2½ teaspoons minced fresh rosemary

For the Glaze

  • ¼ cup chicken broth (divided)
  • 1½ teaspoons orange zest
  • ⅔ cup fresh orange juice
  • 1 tablespoon fresh lemon juice
  • 1½ tablespoons honey
  • 2½ teaspoons cornstarch

Instructions

  1. Prepare the Salmon: Heat olive oil in a large non-stick skillet over medium-high heat. Season both sides of the salmon fillets with salt and freshly ground black pepper. Add the salmon to the pan and cook for 3-4 minutes per side until each fillet is browned and cooked through. Transfer the salmon to a plate and set aside.
  2. Make the Glaze: In the same skillet, add minced garlic and minced fresh rosemary and sauté for about 20 seconds until fragrant. Add ¼ cup of chicken broth and simmer until most of the liquid has reduced. Stir in orange zest, fresh orange juice, lemon juice, and honey to combine.
  3. Thicken the Glaze: In a small bowl, whisk together the remaining 1 tablespoon of chicken broth and cornstarch until smooth. Add this mixture to the skillet, bringing the glaze to a boil. Cook for 1 minute, stirring constantly, until the sauce thickens and becomes glossy.
  4. Combine Salmon and Glaze: Return the salmon fillets to the skillet and spoon the orange rosemary glaze over them. Let the salmon warm in the glaze for an additional 2 minutes to absorb the flavors.
  5. Serve: Plate the salmon and drizzle with extra glaze. Serve alongside rice, couscous, or steamed vegetables. Garnish with additional fresh rosemary if desired.

Notes

  • For optimal flavor, use fresh orange juice and lemon juice instead of bottled varieties.
  • Ensure the skillet is hot before adding the salmon to create a crispy exterior.
  • Do not overcook the salmon; it should reach an internal temperature of 145°F (63°C) for optimal moisture and texture.
  • This glaze can also be paired with other types of fish or chicken for versatility.
  • To make this dish gluten-free, verify that the chicken broth and cornstarch are gluten-free certified.
