Ingredients

Scale

Cookie Dough Truffles

  • 4 ounces Cream Cheese, softened
  • 1/2 cup Unsalted Butter, softened
  • 3/4 cup Light Brown Sugar, packed
  • 3/4 cup All-Purpose Flour, heat treated
  • 1/2 cup Quick Cook Oats
  • 1/2 cup Mini Chocolate Chips
  • 1/2 cup Peanut Butter Morsels
  • 1/2 cup Milk Chocolate M&Ms

Chocolate Coating & Garnish

  • 12 ounces Ghirardelli Dark Chocolate Wafers, melted
  • Sprinkles, optional for garnish

Instructions

  1. Prepare the cookie dough mixture: In a large mixing bowl, beat the softened unsalted butter and cream cheese together for 2-3 minutes until creamy and smooth. Then beat in the light brown sugar and heat-treated all-purpose flour until fully combined. Fold in the quick cook oats, mini chocolate chips, peanut butter morsels, and milk chocolate M&Ms evenly throughout the mixture.
  2. Shape and freeze the truffles: Using a one tablespoon scoop, drop dollops of the cookie dough mixture onto a parchment paper lined, freezer-safe cookie sheet. Place the sheet in the freezer and freeze the truffles for about 2 hours until firm and chilled.
  3. Dip and decorate the truffles: Once frozen, use a toothpick to dip each truffle into the melted dark chocolate wafers coating them completely. Tap the toothpick on the side of the bowl to remove any excess chocolate. While the chocolate is still wet, add sprinkles on top if desired for decoration. Allow the truffles to set completely before serving.

Notes

  • Heat treating the flour is essential to make it safe to consume raw in cookie dough. Spread flour on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, then let it cool.
  • If you don’t have quick cook oats, you can pulse regular oats slightly in a food processor to achieve a similar texture.
  • Store the finished truffles in an airtight container in the refrigerator to keep them firm and fresh. They can also be frozen for longer storage.
  • Swap out the peanut butter morsels or M&Ms for other favorite mix-ins like chopped nuts or different candy pieces for customization.
  • This recipe requires no baking — it’s a simple no-cook treat excellent for warm days or quick desserts.
