Ingredients

Scale

Dairy & Fats

  • 1/2 cup (111g) salted butter, softened
  • 1/4 cup (62g) peanut butter

Sugars & Sweeteners

  • 1 cup (246g) brown sugar
  • 1/4 cup (58g) granulated sugar

Eggs & Extracts

  • 2 eggs
  • 2 tsp vanilla extract

Dry Ingredients

  • 2 cups (304g) all-purpose flour
  • 1 cup (100g) rolled oats
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Add-ins

  • 1 cup (200g) semi sweet chocolate chips
  • 3/4 cup (150g) m&m’s

Instructions

  1. Prepare Pan and Oven: Line a 9×9-inch pan with parchment paper, ensuring excess paper hangs over the edges for easy removal. Preheat the oven to 350°F (180°C).
  2. Cream Butter and Sugars: In a large bowl, cream together the softened salted butter, peanut butter, brown sugar, and granulated sugar until the mixture is smooth, creamy and well combined.
  3. Add Eggs and Vanilla: Beat in the eggs and vanilla extract until the mixture is fully incorporated and smooth.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, rolled oats, baking soda, baking powder, and salt. Gradually mix these dry ingredients into the wet mixture until a sticky dough forms.
  5. Mix in Add-ins: Fold in the semi-sweet chocolate chips and m&m’s gently but thoroughly to evenly distribute throughout the dough.
  6. Transfer and Shape Dough: Pour the dough into the prepared pan. Using your hands or a spatula, loosely press and pack the dough evenly into the pan to ensure it bakes uniformly.
  7. Bake: Place the pan in the preheated oven and bake for 25-30 minutes or until the bars are golden brown on top and a toothpick inserted in the center comes out with a few moist crumbs.
  8. Cool and Serve: Remove from oven and allow the bars to cool completely in the pan on a wire rack. Once cooled, lift out using the parchment paper edges and cut into bars.
  9. Store: Store cookie bars in an airtight container at room temperature for 3-4 days to maintain freshness.

Notes

  • For larger batches, the recipe can be doubled or tripled; adjust baking time accordingly.
  • Using parchment paper helps to lift the bars easily from the pan without sticking.
  • The bars can be customized with your favorite candies or nuts.
  • Ensure bars are fully cooled before slicing to avoid crumbling.
