Ingredients

Scale

Chicken Marinade

  • 2 boneless skinless chicken breasts
  • 2 tbsp Dijon mustard
  • 2 tbsp maple syrup
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tbsp apple cider vinegar or lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Roasted Sweet Potatoes

  • 2 medium sweet potatoes, cubed
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • Pepper, to taste

Bowl Assembly

  • 2 cups cooked quinoa or brown rice
  • 1 cup baby spinach or kale
  • 1/4 cup toasted pecans or walnuts
  • Optional: goat cheese
  • Optional: avocado
  • Optional: dried cranberries

Instructions

  1. Prepare the Marinade: In a bowl, combine Dijon mustard, maple syrup, olive oil, minced garlic, apple cider vinegar (or lemon juice), salt, and black pepper. Mix thoroughly to create the marinade.
  2. Marinate the Chicken: Coat the chicken breasts evenly in the marinade. Cover and let them marinate for 30 minutes up to 4 hours in the refrigerator to absorb the flavors.
  3. Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper. Spread them out on a baking sheet and roast for 25–30 minutes, stirring halfway, until tender and slightly caramelized.
  4. Cook the Chicken: Grill the marinated chicken breasts or pan-sear them over medium-high heat for 6–7 minutes per side until they are cooked through and have a nice golden crust.
  5. Assemble the Bowls: Slice the cooked chicken. In bowls, layer cooked quinoa or brown rice, roasted sweet potatoes, and fresh baby spinach or kale. Top with sliced chicken, toasted nuts, and any optional toppings like goat cheese, avocado, or dried cranberries. Drizzle with extra maple Dijon dressing if desired.

Notes

  • Marinate the chicken longer for deeper flavor.
  • You can substitute quinoa with brown rice or any preferred grain.
  • Adjust smoked paprika level to your taste preference.
  • To make it dairy-free, omit goat cheese.
  • This recipe is great for meal prep and stores well in the fridge up to 3 days.
