Chicken Mixture
- 2 cups cooked chicken breast, shredded (or use rotisserie chicken)
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 2 cloves garlic, minced
- 1/4 cup cream cheese, softened
- 1 tablespoon fresh parsley, chopped
- Salt and pepper, to taste
- 1 handful baby spinach (optional)
Wraps
- 4 large low-carb tortillas or wraps
- 1 tablespoon olive oil
- Prepare the skillet and tortillas: Preheat a skillet or grill pan over medium heat and add the olive oil. While the pan heats, warm the tortillas for about 10-15 seconds in the microwave, covered with a damp paper towel to keep them soft and prevent cracking.
- Mix the filling: In a large mixing bowl, combine the shredded chicken, mozzarella cheese, cheddar cheese, softened cream cheese, minced garlic, chopped parsley, salt, and pepper. If using, add the baby spinach at this stage. Mix everything thoroughly until the cream cheese evenly coats all the ingredients.
- Assemble the wraps: Divide the chicken mixture evenly across the four tortillas, placing around half a cup in the center of each. Roll each tortilla tightly, folding in the sides as you roll to create secure wraps that won’t fall apart during cooking.
- Cook the wraps: Place the wraps seam-side down on the preheated skillet. Cook them for 2 to 3 minutes on each side without moving to allow a golden-brown crust to form and the cheese to melt and slightly ooze from the edges.
- Serve: Remove the cooked wraps from the skillet, slice each in half diagonally, and serve hot. Optionally, garnish with extra fresh parsley for a burst of color and flavor.
Notes
- Warming the tortillas before filling helps prevent them from cracking when rolled.
- You can substitute shredded rotisserie chicken for convenience.
- Baby spinach is optional but adds a nice fresh touch and extra nutrients.
- Be careful not to move the wraps while cooking to ensure a crisp, even browning.
- Serve with a side salad or low-carb dip to complement the low-carb theme.
