Ingredients

Scale

Chicken Marinade

  • 2 pounds chicken breast (cut or pounded into thin cutlets)
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 4 garlic cloves, minced
  • 2 tablespoons Greek seasoning

Cooking

  • 1 tablespoon olive oil (for cooking)

Lemon Feta Topping

  • 4 ounces feta cheese, crumbled
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest (from one lemon)
  • 1 tablespoon chopped fresh parsley (plus more for garnish)
  • 1 teaspoon dried dill (or 1 tablespoon fresh dill)
  • Salt and pepper, to taste

Instructions

  1. Marinate Chicken: Combine the chicken cutlets with 1 tablespoon of olive oil, 2 tablespoons lemon juice, minced garlic, and Greek seasoning. Mix thoroughly to ensure the chicken pieces are evenly coated with the marinade flavors.
  2. Cook Chicken: Heat a large skillet over medium-high heat and add the remaining 1 tablespoon of olive oil. Once hot, place 3-4 chicken cutlets in a single layer in the skillet. Sear them for 3 minutes without moving to develop a golden crust, then flip and cook for an additional 2 to 4 minutes or until the internal temperature reaches 165°F and the chicken is fully cooked through. Remove the chicken from the pan and repeat with remaining cutlets.
  3. Prepare Lemon Feta Topping: In a small bowl, combine the crumbled feta cheese, 1 tablespoon olive oil, 1 tablespoon lemon juice, lemon zest, chopped parsley, and dried dill. Mash together gently with a fork to create a well-mixed, creamy topping. Taste and season with salt and pepper as desired.
  4. Assemble and Serve: Return the cooked chicken cutlets to the skillet or serving dish, spoon the lemon feta topping evenly over the chicken, and garnish with additional fresh parsley. Serve immediately while warm and enjoy the fresh, tangy flavors.

Notes

  • Use fresh lemon juice for the best bright citrus flavor.
  • Pound chicken breasts to even thickness for uniform cooking.
  • Adjust seasoning and fresh herbs to your preference for more or less bold flavors.
  • Serve with a side of steamed vegetables or a simple salad for a complete meal.
  • Ensure chicken reaches an internal temperature of 165°F for safe consumption.
