  • 1 pound ground beef**
  • 24 ounces marinara sauce (1 jar)

Cheese Mixture

  • 15 ounces whole milk ricotta cheese (1 container)
  • 3½ cups freshly shredded mozzarella cheese, divided
  • ½ cup freshly grated parmesan cheese
  • ¼ cup chopped fresh parsley and/or basil
  • 1 large egg
  • ¼ teaspoon ground black pepper

Instructions

  1. Boil: Preheat your oven to 375°F and grease a 9×13-inch baking dish. Bring a large pot of salted water to a boil, then cook the lasagna noodles according to package instructions until al dente. Drain and rinse with cold water, then place the noodles on a parchment-lined sheet pan to prevent sticking.
  2. Cook: Heat olive oil in a large skillet over medium heat. Add the chopped onion and ½ teaspoon kosher salt, cooking until the onion is soft and translucent. Next, add minced garlic and Italian seasoning, cooking for 30 seconds until fragrant.
  3. Brown: Add the ground beef to the skillet and cook thoroughly until browned, breaking it up as it cooks.
  4. Stir: Pour in the marinara sauce and stir to combine with the beef mixture. Remove the pan from heat.
  5. Combine: In a mixing bowl, whisk together ricotta cheese, 1½ cups mozzarella, parmesan cheese, chopped herbs, egg, remaining ½ teaspoon salt, and ground black pepper until well combined.
  6. Layer: Spread about ½ cup of the meat sauce on the bottom of the prepared baking dish.
  7. Spread: On each cooked lasagna noodle, spread 3-4 tablespoons of the cheese mixture evenly. Then spoon 2-3 tablespoons of the meat sauce on top of the cheese layer.
  8. Roll: Carefully roll up each noodle and place seam-side down into the baking dish in a single layer.
  9. Top: Pour the remaining meat sauce over the lasagna roll-ups, then sprinkle the remaining mozzarella cheese evenly on top.
  10. Cover and Bake: Cover the baking dish with foil, making sure the foil does not touch the cheese to prevent sticking. Bake for 20 minutes.
  11. Bake Uncovered: Remove the foil and bake for an additional 10-15 minutes until the edges are browned and bubbly.
  12. Broil (Optional): For extra toasty tops, broil the lasagna rolls for 1-2 minutes, watching carefully to avoid burning.
