This Kielbasa and Potatoes Skillet recipe is a comforting one-pan meal that combines savory browned kielbasa sausage with tender potatoes, sweet Vidalia onions, and a blend of spices. The dish is cooked entirely on the stovetop, making it quick and easy to prepare for a hearty lunch or dinner.

Ingredients

Scale

Meat

  • 16 oz. kielbasa sausage

Vegetables & Aromatics

  • 1 ¼ pounds potatoes (about 5 medium-sized), chopped
  • 1 Vidalia onion, chopped
  • 1 clove garlic, minced

Seasonings

  • ½ tsp paprika
  • ⅓ tsp Kosher salt
  • ¼ tsp oregano or Italian seasoning

Instructions

  1. Preheat Skillet: Heat a skillet over medium-high heat to get it ready for cooking the kielbasa.
  2. Brown the Kielbasa: Slice the kielbasa sausage and add the slices to the hot skillet. Stir occasionally while frying for about 6 minutes until the sausage is evenly browned. Remove the kielbasa from the pan and set aside, leaving the rendered fat in the skillet.
  3. Prepare Vegetables: While the kielbasa is browning, chop the Vidalia onion and potatoes into bite-sized pieces.
  4. Cook the Potatoes: Add the chopped potatoes to the skillet with the kielbasa fat. Sprinkle with paprika, kosher salt, and oregano. Stir to ensure the potatoes are evenly coated with the fat and seasonings. Reduce the heat to medium or medium-low, cover the skillet, and cook the potatoes for about 13 minutes, stirring regularly to avoid sticking and encourage even cooking.
  5. Sauté Onions and Garlic: Add the chopped onions and minced garlic to the skillet with the potatoes. Cover again and continue cooking for about 12 minutes, stirring regularly until the potatoes are tender and the onions are translucent and cooked through.
  6. Combine and Finish Cooking: Return the browned kielbasa slices to the skillet with the potatoes and onions. Mix well and cook for another 4 minutes to allow the flavors to meld and to heat everything through evenly.

Notes

  • Use a sturdy skillet or cast iron pan for best heat retention and even cooking.
  • Adjust seasoning to taste, adding more salt or herbs if desired.
  • For a spicier twist, add a pinch of crushed red pepper flakes when cooking onions and garlic.
  • Ensure potatoes are cut uniformly for even cooking.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
