Ingredients

Scale

Truffle Base

  • 2 cups white chocolate pieces
  • ½ cup heavy cream
  • 5 teaspoons dried culinary lavender
  • 2 tablespoons honey
  • 1 drop violet food coloring (optional)
  • 1 drop royal blue food coloring (optional)
  • 1 drop super red food coloring (optional)

Coating

  • 2 cups white chocolate (melted or tempered)
  • Powdered sugar (for coating hands)

Instructions

  1. Prepare Chocolate: Place white chocolate pieces in a medium bowl and set aside for later use.
  2. Infuse Cream: Combine heavy cream and dried lavender in a small saucepan and heat over medium-low heat until bubbles form around the edges, then turn off the heat and let steep for 5 minutes to infuse the lavender flavor.
  3. Strain and Melt: Strain the lavender-infused cream into the bowl with white chocolate pieces. Melt this chocolate-cream mixture gently in the microwave in 15-second increments, stirring after each, or use a bain-marie until smooth and fully melted.
  4. Add Honey and Color: Stir in the honey thoroughly. If desired, add a drop each of violet, royal blue, or super red food coloring and mix to achieve the preferred pastel hue.
  5. Chill Mixture: Pour the mixture into a clean pan, cover with plastic wrap, and refrigerate until set, approximately 3 hours.
  6. Form Truffles: Using a small cookie scoop or a 1½ teaspoon measuring spoon, scoop out the set mixture. Coat your hands in powdered sugar to prevent sticking and roll each scoop into a smooth ball.
  7. Freeze Truffles: Place the rolled truffles into the freezer for 15-20 minutes to firm up before coating.
  8. Coat with White Chocolate: Dip the chilled truffles into melted or tempered white chocolate, then place them on a parchment-lined sheet pan.
  9. Set the Coating: Allow the dipped truffles to set completely before serving or storing.

Notes

  • Use high-quality white chocolate for the best flavor and texture.
  • Tempering the coating chocolate prevents it from melting too easily at room temperature and gives a shiny finish.
  • Adjust the amount of lavender to taste; too much can create a bitter or overpowering flavor.
  • Food coloring is optional and primarily for aesthetic enhancement.
  • Store truffles in an airtight container in the refrigerator for up to one week or freeze for longer storage.
