Ingredients

Scale

Salmon

  • 1 pound fresh salmon
  • Salt & pepper to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter, divided
  • Fresh lemon juice, to taste (about 1 lemon wedge)

Sauce

  • 1/4 cup low-sodium soy sauce
  • 1/4 cup honey
  • 1/2 tablespoon cornstarch
  • 1/4 teaspoon garlic powder

Instructions

  1. Prepare the Salmon: Remove the salmon from the fridge 15-20 minutes before cooking to bring it to room temperature. Cut the salmon into 4 equal pieces and pat dry with paper towels to ensure a crisp skin. Season both sides generously with salt and pepper.
  2. Heat the Pan: Place a skillet over medium-high heat and add olive oil along with 1 tablespoon of butter. Allow the butter to melt and the pan to heat thoroughly for a few minutes to ensure a good sear.
  3. Make the Sauce: In a medium bowl, whisk together the low-sodium soy sauce, honey, cornstarch, and garlic powder until fully combined. Set aside while the salmon cooks.
  4. Cook the Salmon Skin-side Down: Place the salmon pieces skin-side down in the skillet and cook undisturbed for 5 minutes. This allows the skin to crisp up nicely.
  5. Flip and Finish Cooking: Reduce heat to medium, flip the salmon carefully, and cook for another 2-3 minutes until the salmon is almost cooked through but still moist.
  6. Add Butter and Sauce: Add the remaining 1 tablespoon of butter to the pan and let it melt. Pour the prepared honey-soy sauce evenly between the salmon pieces. Allow the sauce to bubble and thicken for about 30 seconds, then remove the pan from heat to prevent burning. The residual heat will continue thickening the sauce.
  7. Glaze and Serve: Flip the salmon once more, spoon the thickened sauce over each piece, and squeeze fresh lemon juice on top. Serve immediately to enjoy the crispy skin and glossy honey glaze.

Notes

  • The salmon used was approximately 1 inch thick; adjust cooking times if your pieces are thicker or thinner to avoid under or overcooking.
  • If using slightly more than 1 pound of salmon, ensure the pieces are not crowded in the pan to maintain even cooking and crisp skin.
  • This recipe is featured in the Salt & Lavender: Everyday Essentials cookbook, perfect for quick and flavorful meals.
