  • 1 tablespoon lime juice
  • 1 tablespoon fresh cilantro leaves (optional)
  • 12 tablespoons water (optional, to thin dip)

  • 3/4 cup cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 450°F (232°C) to prepare for baking the bean dip.
  2. Blend Ingredients: In a food processor or blender, combine olive oil, black beans, non-fat Greek yogurt, salt, cumin, chili powder, lime juice, and cilantro leaves. Blend until smooth. Add 1-2 tablespoons of water if the dip is too thick, aiming for a creamy, smooth consistency without it becoming watery.
  3. Transfer to Baking Dish: Pour the smooth bean mixture into an 8.5 x 6.5 inch baking dish or an 8×8 inch dish.
  4. Add Cheese: Evenly sprinkle 3/4 cup of cheddar cheese over the top of the bean dip.
  5. Bake: Bake in the preheated oven for 15 minutes, or until the cheese is bubbly and melted. For an extra melted, golden top, broil for 1-2 minutes at the end, watching carefully to avoid burning.
