Scale
Harissa Roasted Tomatoes
2 cups cherry tomatoes
1 tablespoon harissa paste
1 tablespoon olive oil
Couscous
1 cup couscous
1 cup boiling water or vegetable broth
1 tablespoon olive oil
Salt, to taste
Instructions
Prepare the Harissa Tomatoes: Preheat your oven to 400°F (200°C). In a mixing bowl, toss the cherry tomatoes with harissa paste and olive oil until evenly coated. Spread them out on a baking sheet.
Roast the Tomatoes: Roast the tomatoes in the preheated oven for about 15-20 minutes until they are soft, slightly blistered, and aromatic. Remove from oven and set aside.
Prepare the Couscous: In a heatproof bowl, combine the couscous with boiling water or vegetable broth, olive oil, and salt. Cover tightly and let it sit for 5 minutes, then fluff with a fork to separate the grains.
Combine and Serve: Gently fold the roasted harissa tomatoes into the couscous. Serve warm as a side dish or a light main course.
Notes
You can adjust the amount of harissa paste based on your preferred spice level.
For extra flavor, add finely chopped fresh herbs like parsley or cilantro to the couscous before serving.
Vegetable broth in place of water adds more depth to the couscous taste.
This dish pairs well with grilled meats or as a vegetarian main with a side salad.
