A vibrant and spicy side dish featuring harissa-roasted cherry tomatoes combined with fluffy couscous, perfect for a flavorful Mediterranean-inspired meal.

Ingredients

Scale

Harissa Roasted Tomatoes

  • 2 cups cherry tomatoes
  • 1 tablespoon harissa paste
  • 1 tablespoon olive oil

Couscous

  • 1 cup couscous
  • 1 cup boiling water or vegetable broth
  • 1 tablespoon olive oil
  • Salt, to taste

Instructions

  1. Prepare the Harissa Tomatoes: Preheat your oven to 400°F (200°C). In a mixing bowl, toss the cherry tomatoes with harissa paste and olive oil until evenly coated. Spread them out on a baking sheet.
  2. Roast the Tomatoes: Roast the tomatoes in the preheated oven for about 15-20 minutes until they are soft, slightly blistered, and aromatic. Remove from oven and set aside.
  3. Prepare the Couscous: In a heatproof bowl, combine the couscous with boiling water or vegetable broth, olive oil, and salt. Cover tightly and let it sit for 5 minutes, then fluff with a fork to separate the grains.
  4. Combine and Serve: Gently fold the roasted harissa tomatoes into the couscous. Serve warm as a side dish or a light main course.

Notes

  • You can adjust the amount of harissa paste based on your preferred spice level.
  • For extra flavor, add finely chopped fresh herbs like parsley or cilantro to the couscous before serving.
  • Vegetable broth in place of water adds more depth to the couscous taste.
  • This dish pairs well with grilled meats or as a vegetarian main with a side salad.
