Ground Turkey Mixture
- 1 lb ground turkey
- 1 Tbsp sesame oil (or favorite cooking oil)
- 2–3 garlic cloves, minced
- 2 tsp grated ginger
- ½ tsp smoked paprika
- ½ tsp onion powder
- 3 Tbsp low sodium soy sauce
- 1–2 Tbsp sriracha
- 2–3 Tbsp chicken broth
- 2 tsp honey
- ½ tsp black pepper
- ½ tsp sea salt (more or less to taste)
- 2 tsp corn starch
Bang Bang Sauce
- ½ cup mayonnaise
- 3 Tbsp sweet chili sauce
- ½–1 Tbsp sriracha (adjust to taste)
- 1 tsp rice vinegar
- 2 tsp honey
Rice Bowl Options
- Cooked rice
- Shredded carrots
- Sliced cucumbers
- Shelled edamame
- Pickled onions
- Avocado
- Shredded cabbage
- Sliced green onion
- Sesame seeds
- Prep Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until smooth. Adjust the spice level adding extra sriracha to increase heat or more honey/sweet chili sauce to mellow it. Chill the sauce until ready to serve.
- Prepare the Ground Turkey Mixture: Heat sesame oil in a large skillet over medium-high heat. Add ground turkey and break it into smaller pieces with a spoon or spatula. Cook, stirring occasionally, until the turkey is browned and reaches an internal temperature of 165°F. Reduce the heat to medium-low and add garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Simmer for 2-3 minutes, stirring occasionally to combine flavors.
- Thicken the Mixture: Sprinkle corn starch evenly over the turkey mixture and stir well to combine and thicken. If desired, stir in about 2 tablespoons of the bang bang sauce to the meat for added flavor just before serving.
- Assemble Rice Bowls: Layer your bowls with cooked rice and a selection of fresh vegetables such as shredded carrots, sliced cucumbers, shelled edamame, pickled onions, avocado, shredded cabbage, and sliced green onion. Spoon the warm ground turkey mixture over the rice and vegetables. Drizzle generously with the bang bang sauce and garnish with sesame seeds for a final touch of flavor and crunch.
Notes
- Store leftover turkey mixture and bang bang sauce separately in airtight containers in the refrigerator. The turkey will keep for 3-4 days; the sauce can stay fresh for up to a week.
- You can freeze the turkey mixture for up to 3 months. It’s recommended to mix it with some bang bang sauce before freezing for best flavor retention.
- If the turkey mixture becomes dry while cooking or reheating, add a splash of soy sauce or chicken broth to restore moisture.
- The skillet will be hot when adding liquid ingredients, so they may reduce faster than expected. Monitor and add extra liquid if needed to keep the mixture saucy.
