4.5 from 91 reviews

This Grilled Cheese Burrito recipe combines seasoned ground beef, flavorful rice, cheesy queso, and spicy chipotle sauce, all wrapped in a tortilla and broiled until the cheese melts to perfection. It’s a delicious fusion of Mexican flavors and classic grilled cheese comfort.

Ingredients

Scale

Beef Mixture

  • 1 lb. ground beef
  • ⅔ cup water
  • 1 (1 oz.) packet taco seasoning (or 2 Tbsp. homemade)

Rice

  • 1 cup seasoned or yellow rice, prepared according to the package

Cheese & Sauces

  • 1 cup shredded Cheddar cheese, plus more to top
  • 1 cup queso
  • ¼ cup chipotle sauce
  • 1 cup sour cream

Others

  • Crisp red tortilla strips
  • 8 tortillas

Instructions

  1. Cook Ground Beef: In a large skillet over medium-high heat, add the ground beef. Cook thoroughly until no longer pink, breaking it up and stirring occasionally, for about 6-7 minutes. Drain any excess fat to keep the filling less greasy.
  2. Add Seasoning and Simmer: Pour in the water and taco seasoning packet (or homemade seasoning). Stir to combine and let it simmer for an additional 3-4 minutes to blend the flavors well. Once done, set aside the seasoned beef mixture.
  3. Assemble Burritos: Lay out the tortillas on a clean surface. On each tortilla, layer a portion of the seasoned ground beef, cooked seasoned or yellow rice, queso, shredded Cheddar cheese, chipotle sauce, sour cream, and crisp red tortilla strips evenly.
  4. Preheat Broiler and Roll Tortillas: Preheat your oven’s broiler to high. Carefully roll each tortilla so that the edges overlap, ensuring the filling stays inside. Place the rolled burritos fold-side down in an oven-safe skillet. Sprinkle additional shredded Cheddar cheese on top of each burrito for extra melt and flavor.
  5. Broil Burritos: Place the skillet under the preheated broiler. Broil the burritos for 1-2 minutes, or until the cheese on top melts and bubbles beautifully. Remove from the oven and serve warm for the best taste and texture.

Notes

  • For a spicier kick, add extra chipotle sauce or jalapeños.
  • Use flour tortillas for best rolling and crispiness under the broiler.
  • If preferred, substitute ground turkey or chicken for a lighter version.
  • Watch closely during broiling to prevent burning the cheese.
  • Leftovers can be refrigerated and reheated in the oven or microwave.
