Instructions

  1. Activate Yeast: In a bowl, combine the warm purified water with cane sugar. Sprinkle the active dry yeast on top and allow it to sit for 5-10 minutes until it becomes foamy, indicating the yeast is active.
  2. Mix Wet Ingredients: In a stand mixer, add the foamy yeast mixture, eggs, and olive oil. Whisk together to blend the ingredients evenly.
  3. Add Dry Ingredients & Mix Dough: Attach the paddle attachment to the mixer. Add salt and grated parmesan cheese. Gradually incorporate the gluten-free flour blend while mixing on low speed. Continue mixing for an additional 2 minutes to develop the dough.
  4. Adjust Dough Consistency: Gluten-free flours vary in absorption, so adjust moisture as needed. If the dough is wet, add a bit more flour; if dry, add water until the dough is soft but not sticky, ensuring it has room to rise.
  5. Shape the Dough: Transfer the dough onto a parchment paper-lined cookie sheet and shape it into desired individual or large pizza crusts. Gluten-free dough only rises once, so shaping before rising is recommended.
  6. Let Dough Rise: Cover the shaped crust(s) with plastic wrap and allow to rise for 30-45 minutes in a warm place.
  7. Preheat Grill or Oven: For grilling, preheat grill to 425º F. For oven baking, preheat oven to 425º F and heat a pizza stone if using.
