Ingredients

Scale

Pumpkin Spice Pancakes

  • 8.82 oz (250 g) all-purpose flour
  • 2 tsp (8 g) baking powder
  • 1 tsp (4 g) baking soda
  • 1 Tbsp (12 g) sugar
  • 1 tsp (2 g) ground cinnamon
  • 1/2 tsp (1 g) pumpkin pie spice
  • 1 egg
  • 12.88 oz (365 g) milk
  • 8.54 oz (242 g) pumpkin purée
  • 1.41 oz (40 g) vegetable oil
  • 1 tsp (5 g) vanilla bean paste

Cinnamon Sugar Swirl

  • 2 oz (55 g) butter, softened at room temperature
  • 2 oz (55 g) granulated sugar
  • 2 tsp (4 g) ground cinnamon
  • 1 Tbsp pancake batter (reserved)

Cinnamon Butter Topping

  • 4 oz (115 g) butter, softened at room temperature
  • 2.12 oz (60 g) powdered sugar
  • 1 1/2 tsp (3 g) ground cinnamon
  • 1.41 oz (40 g) honey
  • 1/2 tsp (2.5 g) vanilla bean paste
  • 1/16 tsp (0.38 g) sea salt

Instructions

  1. Prepare Pumpkin Spice Pancake Batter: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, sugar, ground cinnamon, and pumpkin pie spice until evenly combined. Make a well in the center and add the egg, milk, pumpkin purée, vegetable oil, and vanilla bean paste. Gently mix until just combined — avoid overmixing to maintain fluffy pancakes. Set the batter aside.
  2. Make Cinnamon Sugar Swirl: In a separate medium bowl, combine the softened butter, granulated sugar, and ground cinnamon. Stir in 1 tablespoon of the pancake batter reserved from step 1 until smooth. Transfer this mixture into a piping bag and snip off the tip. Set aside for swirling.
  3. Cook the Pancakes: Preheat a non-stick pancake pan over medium heat for 5 minutes. Lightly grease with a small amount of butter. Using a 1/4 cup measure, scoop the pancake batter onto the pan. Immediately pipe the cinnamon sugar swirl over each pancake. Let cook undisturbed until small bubbles begin to appear on the surface, about 1-2 minutes. Carefully add a teaspoon of water to the edge of the pan, then cover with a lid to steam and cook the pancakes through for an additional 1-2 minutes. This method cooks pancakes fully without flipping, preserving the swirl design. Repeat until all batter is used, re-buttering the pan between batches if needed.
  4. Prepare Cinnamon Butter Topping: In a clean mixing bowl, beat together the softened butter, powdered sugar, ground cinnamon, honey, vanilla bean paste, and sea salt until creamy and smooth. Spoon the cinnamon butter into a piping bag fitted with a star tip.
  5. Serve: Pipe the cinnamon butter generously over the warm pancakes just before serving. Enjoy this deliciously spiced, visually stunning breakfast perfect for fall!

Notes

  • Do not overmix the pancake batter to keep pancakes light and fluffy.
  • Use the steaming method instead of flipping to preserve the cinnamon sugar swirl design on the pancakes.
  • Pumpkin pie spice can be homemade with cinnamon, nutmeg, ginger, and cloves if unavailable commercially.
  • Vanilla bean paste adds extra depth but can be substituted with vanilla extract.
  • Keep the butter for cinnamon sugar swirl at room temperature so it mixes smoothly with sugar and cinnamon.
  • If you don’t have a piping bag, use a zip-top bag with a small corner cut off for swirling and topping.
  • Serve pancakes immediately with extra cinnamon butter if desired.
