Inspired by Taco Bell’s bold flavors, this comfort food favorite is quick to prepare, customizable, and perfect for a satisfying meal at home.

Ingredients

Scale

For the Burrito Filling:

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)
  • 1 cup cooked white rice
  • ½ cup sour cream
  • ½ cup nacho cheese sauce
  • ¼ cup chipotle sauce (or substitute with smoky mayo or spicy ranch)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas

For the Grilled Cheese Exterior:

  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Butter or oil for the skillet

Instructions

  1. Cook the Beef (8–10 mins): In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease, then add the taco seasoning along with ¼ cup water. Stir and simmer for about 5 minutes until the seasoning is absorbed and the mixture is flavorful.
  2. Warm the Tortillas: Heat the flour tortillas on a dry skillet or briefly in the microwave to make them soft and flexible for easy folding and rolling.
  3. Assemble the Burrito (5 mins): Lay a tortilla flat on a work surface and layer in the center about ¼ cup of cooked rice, 2 to 3 tablespoons of the seasoned beef, 1 tablespoon each of nacho cheese sauce, chipotle sauce, and sour cream. Sprinkle evenly with shredded cheddar and mozzarella cheeses.
  4. Roll It Up: Fold in the sides of the tortilla then roll tightly from the bottom to the top to enclose the filling securely in a burrito shape.
  5. Grill with Cheese (3–4 mins per side): In a clean skillet over medium heat, sprinkle 2 tablespoons of shredded cheese. Place the burrito seam-side down atop the cheese and press gently. Cook until the cheese melts and forms a crispy golden crust, about 3 to 4 minutes. Carefully flip and repeat on the other side to create a grilled, cheesy exterior coating.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat burritos in a skillet for crispy cheese crust or microwave for 60 to 90 seconds for convenience.
  • Add black beans, guacamole, or jalapeños to the filling to customize flavors.
  • Substitute beef with grilled chicken, shredded pork, or plant-based crumbles for variations.
  • For a dairy-free version, use plant-based cheese and sour cream alternatives.
  • To freeze, wrap burritos individually in foil and freeze for up to 1 month; reheat in oven or skillet.
