Perfect for a quick weeknight dinner or a healthy lunch, it combines Italian flavors with a low-calorie approach.

Ingredients

Scale

For the Chicken Parmesan Topping

  • 1 large boneless, skinless chicken breast (about 6 oz)
  • 1/4 cup whole wheat breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp dried Italian seasoning
  • 1 tsp olive oil
  • Salt and pepper to taste

For the Pizza Base and Assembly

  • 1 whole wheat flatbread (about 68 inches diameter)
  • 1/3 cup marinara sauce, no sugar added
  • 1/2 cup shredded part-skim mozzarella cheese
  • 2 tbsp grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Prepare the Chicken: Preheat the oven to 400°F (200°C). Slice the chicken breast into thin cutlets. In a bowl, mix breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper. Brush chicken with olive oil, then coat evenly with the breadcrumb mixture.
  2. Bake the Chicken: Place coated chicken cutlets on a baking sheet lined with parchment paper. Bake for 15-18 minutes until golden and cooked through, turning halfway for even crispiness. Remove and let cool slightly.
  3. Assemble the Pizza: Place the flatbread on a baking sheet or pizza stone. Spread marinara sauce evenly over the flatbread. Slice the baked chicken cutlets into strips and arrange them on top. Sprinkle mozzarella and Parmesan cheese evenly over everything.
  4. Bake the Pizza: Bake the assembled pizza in the oven at 400°F (200°C) for 8-10 minutes until cheese is melted and bubbly and the flatbread edges are crisp.
  5. Garnish and Serve: Remove the pizza from the oven, garnish with fresh basil leaves if desired, slice, and serve warm. Enjoy your low-calorie, flavorful chicken parmesan pizza!
