Thickener & Garnish

  • 2 tablespoons cornstarch
  • 3 tablespoons cold water
  • 2 tablespoons toasted sesame seeds
  • 2 green onions, sliced

Instructions

  1. Prepare the Chicken: Cut the boneless, skinless chicken thighs into bite-sized pieces to ensure even cooking and better sauce absorption.
  2. Mix the Sauce: In a bowl, whisk together soy sauce, honey, ketchup, rice vinegar, sesame oil, minced garlic, grated ginger, and crushed red pepper flakes until well combined.
  3. Combine in Crockpot: Place the chicken pieces in the slow cooker and pour the sauce mixture over them. Stir gently to coat the chicken evenly with the sauce.
  4. Cook Low and Slow: Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until the chicken is tender and fully cooked.
  5. Thicken the Sauce: About 30 minutes before serving, whisk cornstarch and cold water together to make a slurry. Stir the slurry into the crockpot to thicken the sauce. Cover and continue cooking on high until the sauce has thickened.
  6. Serve and Garnish: Spoon the sesame chicken over steamed rice or vegetables, then garnish with toasted sesame seeds and sliced green onions for a burst of flavor and texture.
