Instructions

  1. Preheat Oven: Preheat your oven to 400°F and line a sheet pan with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare Carrots: Cut the peeled carrots crosswise into 2-inch sections, then slice each section in half lengthwise to create flat surfaces for crisping.
  3. Mix Seasonings: In a large bowl, combine olive oil, kosher salt, minced garlic, onion powder, red pepper flakes, and chopped rosemary. Stir well to infuse the oil with the herbs and spices.
  4. Coat Carrots: Add the prepared carrots to the bowl and toss thoroughly to coat each piece evenly with the seasoned olive oil mixture.
  5. Prepare Parmesan Base: Sprinkle 1 ½ cups of the grated parmesan cheese onto the parchment paper in an 8×12-inch rectangular area, enough to hold the carrots for a parmesan crust.
  6. Arrange Carrots: Place each carrot piece cut side down onto the parmesan-coated area tightly in a rectangular pattern, minimizing gaps to ensure even crisping.
  7. Add More Cheese: Sprinkle the remaining ½ cup parmesan cheese evenly on top of the arranged carrots for extra crispy topping.
