Brussels Sprouts

  • 1 lb. Brussels sprouts, halved and trimmed
  • 1 tbsp olive or avocado oil
  • Salt to taste

Sauce

  • 1/2 tbsp olive or avocado oil
  • 1 tsp grated ginger
  • 2 tbsp BBQ sauce
  • 1 tbsp coconut aminos (soy sauce can also be used)
  • 1/2 tbsp rice vinegar
  • Salt to taste
  • Pinch of Korean style red pepper flakes (optional)
  • Chopped cilantro and/or sesame seeds for topping (optional)

Instructions

  1. Prepare Brussels Sprouts: Combine the halved and trimmed Brussels sprouts with 1 tablespoon of olive or avocado oil and salt to taste. Toss well to coat evenly.
  2. Cook Brussels Sprouts: For Air Fryer: Place sprouts in the air fryer basket and cook at 380°F for 6 minutes. Toss them and continue cooking for another 5-7 minutes until crispy and golden. For Oven Baking: Arrange sprouts in a single layer on a baking sheet. Bake at 400°F for 18-22 minutes, tossing halfway through, until crispy and golden.
  3. Prepare Sauce Mixture: In a small bowl, combine BBQ sauce, coconut aminos, rice vinegar, salt, and Korean red pepper flakes if using. Mix well.
  4. Cook Sauce: Heat 1/2 tablespoon of oil in a small saucepan over medium heat. Add grated ginger and cook, stirring frequently, for about 1 minute without burning. Add the prepared sauce mixture and reduce heat to low. Let the sauce thicken and reduce for 4-5 minutes, whisking occasionally.
  5. Combine Brussels Sprouts and Sauce: When the Brussels sprouts are cooked, add them directly into the saucepan with the sauce. Stir to coat them fully in the thickened sauce.
  6. Caramelize with Sauce: For Air Fryer: Return the coated Brussels sprouts to the air fryer and cook at 400°F for 2-3 minutes to caramelize the sauce. For Oven Baking: Return the sprouts to the baking sheet and bake at 400°F for 2-3 more minutes.
  7. Serve: Transfer the Brussels sprouts to a serving dish. Garnish with chopped cilantro and sesame seeds if desired. Serve immediately and enjoy!
