Ingredients

Scale

Chicken and Meat

  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup cooked beef bacon, crumbled

Dairy

  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese

Seasoning

  • 1 packet (1 ounce) ranch seasoning mix
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper

Optional Garnish

  • 1/4 cup chopped green onions or fresh chives

Instructions

  1. Prepare Chicken and Beef Bacon: Cook and shred chicken breasts or use shredded rotisserie chicken. Cook beef bacon until crispy, then crumble it into small pieces. Set both aside for assembly.
  2. Make Creamy Ranch Base: In a large mixing bowl, combine softened cream cheese and sour cream. Mix thoroughly until smooth and creamy. Stir in milk, ranch seasoning mix, garlic powder, onion powder, and black pepper until the mixture is well combined and evenly flavored.
  3. Assemble Casserole: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish to prevent sticking. Fold the shredded chicken into the creamy ranch base until all pieces are well coated. Spread this mixture evenly in the prepared dish. Sprinkle half of the shredded cheddar cheese and half of the crumbled beef bacon evenly over the chicken mixture. Then add the remaining cheddar cheese and beef bacon on top for extra cheesy and bacon flavor.
  4. Bake Casserole: Cover the baking dish tightly with aluminum foil to retain moisture during baking. Bake for 20 minutes in the preheated oven. After 20 minutes, remove the foil and bake uncovered for an additional 10-15 minutes, or until the top is golden brown and bubbly. Remove from the oven and let the casserole rest for 5-10 minutes to set. Garnish with chopped green onions or fresh chives before serving, if desired.

Notes

  • You can use rotisserie chicken for a quick shortcut.
  • Beef bacon adds a unique flavor, but you can substitute with regular bacon if preferred.
  • Adjust the ranch seasoning amount to suit your taste preference.
  • Letting the casserole rest before serving helps it set and makes it easier to serve.
  • For a lower-fat version, use reduced-fat cream cheese, sour cream, and milk.
