Instructions

  1. Cream Butter and Sugar: In the bowl of a stand mixer, combine the butter and granulated sugar. Cream on medium-high speed for 3-5 minutes until the mixture is light and fluffy, which creates a tender, airy cookie texture.
  2. Add Eggs and Extracts: Add the eggs, vanilla extract, and almond extract to the creamed butter and sugar. Mix on low speed just until everything is incorporated, avoiding overmixing.
  3. Incorporate Dry Ingredients: Add the flour, corn starch, baking soda, and salt to the wet mixture. Mix on low speed until the ingredients are just combined to maintain a tender crumb.
  4. Fold in Sprinkles: Pour in ¾ cup of sprinkles and use a spatula to gently fold them into the dough evenly, giving the cookies their signature colorful confetti look.
  5. Chill the Dough: Chill the dough for at least 30 minutes or up to 24 hours. You can scoop cookie portions onto a parchment-lined baking sheet and cover with plastic wrap before chilling or chill the whole bowl wrapped in plastic. If chilling the whole bowl, allow the dough to sit at room temperature for 15–20 minutes before scooping to soften slightly.
