  • 1 cup milk
  • 1 small onion, finely chopped
  • 1 cup frozen peas and carrots
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Topping

  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare it for baking the casserole.
  2. Mix Ingredients: In a large mixing bowl, combine the uncooked rice, cream of chicken soup, cream of mushroom soup, chicken broth, milk, and finely chopped onion. Mix thoroughly to combine all ingredients evenly.
  3. Add Chicken and Veggies: Stir in the shredded cooked chicken, frozen peas and carrots, garlic powder, onion powder, salt, and pepper. Make sure everything is well mixed for balanced flavor throughout.
  4. Prepare Baking Dish: Lightly grease a 9×13 inch baking dish to prevent sticking. Pour the prepared mixture evenly into the baking dish.
  5. Bake Covered: Cover the dish tightly with aluminum foil and bake in the preheated oven for 1 hour, allowing rice to cook and flavors to meld.
  6. Add Cheese Topping: Remove the foil, sprinkle the shredded cheddar cheese evenly over the casserole, then return to the oven. Bake uncovered for another 10-15 minutes, or until the cheese is melted and bubbly.
  7. Rest and Serve: Let the casserole sit for a few minutes after baking to set and cool slightly before serving for best texture and flavor.
