Chicken and Rice Mixture
- 2 cups cooked chicken, shredded
- 1 cup long-grain white rice, uncooked
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (14.5 oz) chicken broth
- 1 cup milk
- 1 small onion, finely chopped
- 1 cup frozen peas and carrots
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Topping
- 1 cup shredded cheddar cheese
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare it for baking the casserole.
- Mix Ingredients: In a large mixing bowl, combine the uncooked rice, cream of chicken soup, cream of mushroom soup, chicken broth, milk, and finely chopped onion. Mix thoroughly to combine all ingredients evenly.
- Add Chicken and Veggies: Stir in the shredded cooked chicken, frozen peas and carrots, garlic powder, onion powder, salt, and pepper. Make sure everything is well mixed for balanced flavor throughout.
- Prepare Baking Dish: Lightly grease a 9×13 inch baking dish to prevent sticking. Pour the prepared mixture evenly into the baking dish.
- Bake Covered: Cover the dish tightly with aluminum foil and bake in the preheated oven for 1 hour, allowing rice to cook and flavors to meld.
- Add Cheese Topping: Remove the foil, sprinkle the shredded cheddar cheese evenly over the casserole, then return to the oven. Bake uncovered for another 10-15 minutes, or until the cheese is melted and bubbly.
- Rest and Serve: Let the casserole sit for a few minutes after baking to set and cool slightly before serving for best texture and flavor.
Notes
- Use rotisserie chicken or leftover cooked chicken for convenience.
- Ensure the rice is fully cooked before serving; adjust cooking time if necessary depending on your oven.
- For a healthier version, substitute low-fat soups and cheese, and use brown rice (adjust cooking time accordingly).
- Add herbs like thyme or parsley for extra flavor if desired.
- Cover tightly with foil during baking to keep moisture in and cook the rice evenly.
