Ingredients

Scale

Main Ingredients

  • 1 pound ground beef
  • 1 (28 oz) bag frozen cubed potatoes with onions & peppers
  • 1 (10.5 oz) can cheddar cheese soup
  • 1 (10.5 oz) can cream of celery soup (or cream of mushroom soup)
  • 2+ cups shredded cheddar cheese
  • Seasoning to taste (salt, pepper, garlic powder, etc.)

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish to prevent sticking.
  2. Brown the Ground Beef: In a medium skillet, cook the ground beef over medium heat, chopping it up as it browns until no pink remains. Season with salt, pepper, garlic powder, or other desired seasonings. Drain excess grease by dabbing with a paper towel.
  3. Mix Ingredients: In a large bowl, combine the cooked ground beef, frozen potatoes with onions and peppers, cheddar cheese soup, cream of celery soup, and half of the shredded cheddar cheese. Stir well to evenly distribute all ingredients. Adjust seasonings carefully, considering the salt content in the soups.
  4. Assemble the Casserole: Spread the mixture evenly into the prepared baking dish. Sprinkle the remaining shredded cheddar cheese evenly over the top to your preference.
  5. Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes.
  6. Bake Uncovered: Remove the foil and continue baking for an additional 15 minutes or until the cheese on top begins to brown and the casserole is bubbly.
  7. Optional Broiling: For a crispier, browned cheese topping, you can broil the casserole for the last 2 to 3 minutes. Watch closely to prevent burning.

Notes

  • You can substitute cream of celery soup with cream of mushroom soup for a different flavor.
  • Adjust seasoning carefully since canned soups already contain salt.
  • Use as much or as little cheddar cheese on top as desired.
  • Letting the casserole rest for 5-10 minutes after baking allows it to set for easier serving.
  • For a lower-fat version, use lean ground beef and reduced-fat cheese.
