Ingredients

Scale

Puff Pastry

  • 1 sheet store-bought frozen puff pastry, thawed (25 cm x 25 cm / 10″ x 10″)

Pear Mixture

  • 2 pears
  • 2 tbsp unsalted butter
  • 1/3 cup brown sugar, lightly packed
  • Pinch of salt

Toppings and Finishing

  • 1 egg, lightly beaten (for egg wash)
  • 1/3 to 1/2 cup crumbled blue cheese (gorgonzola recommended)
  • 3 tbsp walnuts, roughly chopped

Instructions

  1. Preheat and Prepare Pastry: Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper. Cut the thawed puff pastry into 4 equal squares and transfer them to the prepared baking tray. Score a 2/3 inch (1.5 cm) border on each pastry square to help maintain the edge while baking.
  2. Prepare Pears: Core the pears and cut each pear into quarters, then slice each quarter into 3 to 4 thin slices for even cooking and layering.
  3. Caramelize Pears: In a small frying pan or saucepan over medium-high heat, combine the pear slices, butter, brown sugar, and a pinch of salt. Cook for about 5 minutes, stirring occasionally, until the pears soften and the sugar and butter amalgamate into a sticky syrup coating the fruit.
  4. Apply Egg Wash: Remove the pan from heat and set the pear mixture aside to cool for 5 minutes. Meanwhile, brush the scored borders of each pastry square with the beaten egg to help achieve a golden, glossy finish during baking.
  5. Assemble Tarts: Spoon the pear and syrup mixture onto each pastry square within the scored borders, distributing the syrup evenly for added sweetness and moisture.
  6. Bake and Add Walnuts: Bake the tarts in the preheated oven for 20 to 25 minutes, or until the pastry turns a deep golden brown. Add the chopped walnuts to the baking tray during the last 5 minutes of baking to toast them lightly.
  7. Final Touches: Remove the tarts from the oven and let them cool for 5 minutes. Top each tart generously with crumbled blue cheese, scatter the toasted walnuts over the top, and drizzle with any remaining pear syrup from the pan. Serve immediately, optionally with yoghurt on the side for contrast.

Notes

  • Note 1: Cutting the puff pastry into four ensures perfectly-sized individual tarts great for serving as appetizers or snacks.
  • Note 2: Scoring the border helps the center rise and hold the filling while keeping the edges crisp and defined.
  • Note 3: Egg wash on the pastry border creates a beautiful golden shine and adds a slight crispness to the edges.
