Ingredients

Scale

For the Blackened Chicken Sandwich

  • 2 blackened chicken breasts (or thighs)
  • 2 kaiser buns
  • 1 tablespoon butter
  • 1 ounce Colby Jack cheese, sliced
  • 2 leaves romaine lettuce
  • 1/4 cup sliced onion
  • 1/2 avocado, sliced

For the Sandwich Sauce

  • 1/4 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 teaspoon blackened seasoning
  • 2 teaspoons lemon juice

Instructions

  1. Prepare the sandwich sauce: In a bowl, whisk together mayonnaise, ketchup, blackened seasoning, and lemon juice until the mixture is smooth and well combined. Cover and refrigerate the sauce until you’re ready to assemble the sandwiches to allow the flavors to meld.
  2. Heat the blackened chicken: If using leftover blackened chicken, heat a skillet over medium heat. Add the chicken and cook for 1 to 2 minutes on each side until warmed through. Remove chicken from the skillet and set aside.
  3. Toast the buns: In the same skillet, melt the butter over medium heat. Place each bun half cut side down into the skillet and cook until the cut sides are golden brown and toasty, about 1-2 minutes. Remove the buns from the skillet and set aside.
  4. Assemble the sandwich: Spread a generous amount of the prepared sandwich sauce on the bottom half of each toasted bun. Layer on the warm blackened chicken breast, followed by a slice of Colby Jack cheese, romaine lettuce leaves, sliced onion, and avocado slices. Top with the other half of the bun.
  5. Serve immediately: Enjoy your flavorful Blackened Chicken Sandwich right away while the chicken is warm and the buns are crisp.

Notes

  • For the blackened chicken, you can use freshly cooked or leftover chicken breasts or thighs seasoned with blackened seasoning.
  • If desired, substitute the Colby Jack cheese with cheddar or pepper jack for a spicier kick.
  • The sandwich sauce can be prepared a day in advance and stored in the refrigerator for enhanced flavors.
  • To make it a little lighter, use light mayonnaise or Greek yogurt in the sandwich sauce.
  • Feel free to add pickles or tomato slices for additional freshness and crunch.
