  • 2 cups mushrooms (sliced, such as cremini or button)
  • 2 cloves garlic (minced)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup beef broth
  • 1 cup sour cream
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Cook the Pasta: In a large pot, bring salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.
  2. Prepare the Beef & Mushroom Sauce: In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside. In the same skillet, add the chopped onion and sliced mushrooms. Sauté for about 5-7 minutes, or until the mushrooms are tender and the onions are translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant. Return the cooked beef to the skillet. Stir in the Worcestershire sauce, Dijon mustard, and beef broth. Bring to a simmer and cook for about 5 minutes. Reduce the heat to low and stir in the sour cream. Mix until well combined and heated through. Season with salt and pepper to taste.
  3. Combine with Pasta: Add the cooked pasta to the skillet and gently toss to coat the noodles with the beef and mushroom sauce.
