Scale

Main Ingredients

  • 2 cups cooked, shredded chicken (rotisserie or homemade)
  • 1 cup BBQ sauce (your favorite brand or flavor)
  • 1 cup shredded cheddar cheese
  • 1 cup frozen corn
  • 1/2 cup diced red onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 bag frozen tater tots (32 ounces)
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot and ready for baking the casserole.
  2. Prepare Chicken: Shred the cooked chicken into bite-sized pieces to allow even mixing and easier eating.
  3. Mix Chicken and BBQ Sauce: In a large mixing bowl, combine the shredded chicken with the BBQ sauce and stir thoroughly until the chicken is well coated.
  4. Add Remaining Ingredients: Add the shredded cheddar cheese, frozen corn, diced red onion, garlic powder, onion powder, and black pepper to the bowl. Mix well to combine all ingredients evenly.
  5. Assemble Casserole: Grease a 9×13-inch baking dish lightly. Spread the chicken and veggie mixture evenly across the bottom of the dish.
  6. Top with Tater Tots: Arrange the frozen tater tots in a single layer on top of the chicken mixture, covering it completely for a crispy topping.
  7. Bake: Place the baking dish in the preheated oven. Bake for 30-35 minutes or until the tater tots on top are golden brown and crispy, and the casserole is heated through.
  8. Cool and Garnish: Remove from the oven and let it cool for about 5 minutes. Sprinkle chopped fresh parsley on top before serving for a fresh touch.

Notes

  • Use rotisserie chicken to save time or cook your own chicken breast or thighs.
  • Feel free to substitute cheddar cheese with Monterey Jack or mozzarella for different flavors.
  • For extra spice, add a pinch of cayenne pepper or chopped jalapeños to the mixture.
  • Let the casserole rest after baking to help it set and make serving easier.
  • You can prepare this casserole a day ahead and bake it just before serving.
