Potatoes

  • 30 g (2 tbsp) unsalted butter, no need to melt
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1 tbsp fresh parsley, finely chopped

Instructions

  1. Boil Potatoes: Place the baby potatoes into a large pot filled with cold tap water along with 1 tablespoon of salt. Bring the water to a rolling boil over high heat, then reduce the heat to medium to maintain a gentle simmer. This careful simmering prevents the potato skins from splitting. Cook for 10 to 15 minutes until a knife can pierce easily through the potatoes. Alternatively, you may steam the potatoes if preferred.
  2. Steam Dry Potatoes: Drain the potatoes using a colander and leave them to sit for one minute so they steam dry. This step ensures excess moisture evaporates, which helps the butter adhere evenly to the potatoes.
  3. Toss with Butter and Season: Transfer the drained and dried potatoes to a bowl. Add the unsalted butter along with 1/2 teaspoon salt and 1/2 teaspoon pepper. Gently toss the potatoes so the butter melts from the residual heat and coats each potato uniformly.
  4. Add Fresh Herbs and Serve: Just before serving, stir through the finely chopped fresh dill, chives, and parsley. Transfer the potatoes to a serving bowl and serve warm for the best flavor experience.
