  2. Make Shortbread Dough: Cream the room temperature unsalted butter in a stand mixer on high speed for about 5 minutes until light and fluffy. Add ¼ cup sugar, 1 teaspoon vanilla extract, and ¼ teaspoon salt, mixing until fully combined. Gradually add 1 cup all-purpose flour and mix until a dough forms.
  3. Bake Shortbread Crust: Press the dough evenly into the prepared pan. Bake in the preheated oven for 15 minutes.
  4. Prepare Apple Filling: In a mixing bowl, combine the peeled and thinly sliced apples with 2 tablespoons all-purpose flour, 2 tablespoons sugar, 1 teaspoon ground cinnamon, and ¼ teaspoon ground nutmeg. Toss to coat the apples evenly.
  5. Prepare Topping: In another bowl, mix ½ cup all-purpose flour and ¾ cup brown sugar. Cut in ¼ cup butter (melted or room temperature) using a pastry cutter or fork until the mixture resembles coarse crumbs.
  6. Assemble Bars: Remove the shortbread crust from the oven and immediately increase the oven temperature to 350°F (175°C). Sprinkle half of the topping evenly over the crust.
