Ingredients

Scale

Wet Ingredients

  • 1 cup cottage cheese (full-fat, small curd)
  • 2 large eggs
  • 1/3 cup maple syrup
  • 1/4 cup melted butter (cooled)
  • 1 tsp vanilla extract

Fruit

  • 1 1/2 cups grated apple (about 2 small apples, skin on)

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp ground cinnamon
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Mix the Wet Ingredients: In a large bowl, whisk together the cottage cheese, eggs, maple syrup, cooled melted butter, and vanilla extract until fully combined.
  2. Add the Grated Apple: Stir in the finely grated apples with the skin on until mixed evenly throughout the wet mixture.
  3. Mix the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, ground cinnamon, baking powder, baking soda, and salt until well blended.
  4. Combine Wet and Dry Ingredients: Add the dry ingredients to the wet apple mixture and gently stir with a spatula until just combined; be careful not to overmix to keep the muffins tender.
  5. Fill Muffin Tin and Bake: Scoop the batter evenly into a lined or well-greased 12-cup muffin tin. Bake at 350°F (175°C) for 20 to 22 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Let the muffins cool for 5 minutes in the tin, then transfer to a wire rack to cool completely. Enjoy warm or at room temperature.

Notes

  • Do not overmix the batter; overmixing can lead to dense muffins.
  • Grate the apple finely for even baking and the best texture.
  • Allow melted butter to cool completely before mixing to prevent curdling the eggs or cottage cheese.
  • Use paper liners or grease the muffin pan well to prevent sticking.
  • Can substitute applesauce (3/4 cup) for grated apples, but texture will be softer.
  • Gluten-free option: Use 1:1 gluten-free baking flour in place of all-purpose flour.
  • If you dislike curds in cottage cheese, blend it smooth before combining with other ingredients.
  • Store muffins in an airtight container at room temperature for up to 2 days, in the fridge up to 5 days, or freeze for up to 2 months.
