Quesadilla Filling

Quesadillas

  • 4 large burrito sized flour tortillas
  • 4 tbsp butter
  • melted butter (for brushing)
  • mixture of cinnamon & sugar (for sprinkling)

Instructions

  1. Prepare the cream cheese mixture: In the bowl of a stand mixer, combine softened cream cheese, granulated sugar, vanilla extract, and ground cinnamon. Whip together until the mixture is smooth, creamy, and fully incorporated.
  2. Assemble the quesadillas: Spread one quarter of the cream cheese mixture evenly over one side of a flour tortilla. Layer thinly sliced apples over half of the tortilla. Fold the tortilla over to enclose the filling.
  3. Heat the skillet: Melt 1 tablespoon of butter in a flat-bottomed skillet over medium-low heat. Once melted, place one assembled quesadilla in the skillet.
  4. Cook the quesadilla: Cook for 1-2 minutes or until the bottom side turns golden brown. Using two spatulas, carefully flip the quesadilla and cook for another 1-2 minutes until the other side is also golden brown. Repeat this process for the remaining quesadillas, melting more butter as needed.
  5. Brush and sprinkle: Using a basting brush, lightly coat one side of each cooked quesadilla with melted butter, then sprinkle generously with the cinnamon sugar mixture. Flip and repeat on the other side for all quesadillas.
